Y’all know we love our food here at TLR HQ. The Cookout is all about hearty food and southern flavours with a pinch of Country music. This week we’re celebrating Thanksgiving by sharing with you easy to make, at home recipes, courtesy of our friend Wilson’s BBQ. Starting with our vegetarian jackfruit tacos! In a jar, pour your apple cider vinegar on thinly sliced red onion until they are submerged. Add a small amount of salt and pepper. Shut the jar and leave until assembling the tacos
Take your medium white onion and finely dice it. Then, take you a large beef tomato and cut it up anyway you like. Once the onions are in and have started to sweat down, add your salt and pepper.
Once the onions are fragrant, start adding your spices. Stir to cook out the raw ground spice flavour. Chopped tomatoes go in.
Get your jackfruit to a pulled pork kind of texture by chopping it up
Add the Jack fruit to the pan, let that sweat away and allow the jackfruit to breakdown for about 10 minutes, making sure you give it a stir in between. Once your onions are caramelised those onions and you’ve reached a pulled pork consistency, you should be ready to go.
Heat up your tortillas wrapped in tin foil in the oven for about a minute.
Add your jackfruit mix to the inside of the tortilla and add your sour cream, crumbled feta and chopped coriander on top
